Mint Choco Chip Ice cream

And Basic Vanilla Ice cream

The rains pouring outside is a relief after the unbearable heat! There is something soothing about the soft spluttering of the rains & makes me all dreamy! The trees are all so much greener, the birds chirpier & happier and the smell of freshness in the air is intoxicating. Reading a good book & having some crispy pakoras are all I want to usually do the whole day when it pours outside..!

 And the the craving for a big bowl of ice cream strikes! And it does not seem to let go that easily. The only option was for me to give in. These cravings sometimes does not follow the weather!

A task to churn an ice cream was sketched. And mint flavor it was!The recipe is not too sweet & suited us just fine. The mint flavor is refreshing & the choco chips give a nice bite to it. No wonder the combination of mint with chocolate is a favorite with many! And when I saw my dear sweet family enjoying every spoonful of my first ice cream, I came around to understand & feel what mom kept saying all these years….Watching dad, sis & esp mom relishing it with joy was pure bliss to me than me actually eating it..And just then the sky turns cloudy, showing signs of soon-to-pour rains. A happy & content me is off to a magical land with the soothing sound of rains & laughter in the background…

Mint Choco Chip Ice cream

Minty flavor dotted with choco chips!

  • Makes – 1/2 litre (500 ml)
  • 2.5 cups milk (1/2 litre)
  • 4 tbsp sugar
  • 1 1/4 tbsp cornflour
  • 1/2 cup 100 gms fresh cream
  • 2 tsp crushed peppermint (i used polo)
  • 2 tbsp or more choc chips
  1. Dissolve cornflour in a cup of milk & set aside.
  2. Put remaining milk to boil in a pan. When it is heated, add the cornflour mixture & stir constantly as you add it. Also add the sugar & stir.
  3. Simmer for 4-5 mins. Then remove from heat & cool completely to room temp.
  4. Add the cream & mix. Transfer to a shallow plastic container & freeze till almost set. It took about 7-8 hrs for me.
  5. Then divide the mixture into 2 batches & churn each batch separately in blender till smooth. Transfer back to shallow container.
  6. Add the crushed peppermint, choco chip & mix & freeze once again till firm. Here as you have added choco chip, it settles at the bottom after adding. So after 1.5 of adding the choco chip, stir once so that they mix well & keep back to freeze.

For Basic Vanilla Icecream :
Skip the peppermint & choco chip & instead add 1 tsp vanilla essence when you add in the cream. Freeze till almost set. Divide into 2 batches & churn each batch separately in blender. Keep back in freezer & freeze till firm.
