 An eggless strawberry flavored cake topped with a quick strawberry sauce!


Strawberry Custard Powder Cake

For the cake
  1. 1.5 cups AP flour (maida)
  2. 3/4 cup strawberry flavor custard powder
  3. 3/4 cup powdered sugar
  4. 2 1/4 tsp baking powder
  5. 3/4 cup (150 gms) butter
  6. 1 cup milk
For strawberry sauce
  1. 1/4 cup or to taste strawberry crush
  2. 1 cup or to taste water
  3. 1-2 tsp cornflour
For the Cake
  1. Sift the flour, custard powder and BP together & set aside.
  2. In another bowl beat together the butter & sugar till creamy. Then add in the sift dry ingredients to the creamed butter-sugar and mix well.
  3. Gradually add the milk and beat slowly until everything comes together.
  4. Preheat the oven to 180 C or 350 F. Grease the oven proof cake tin with butter.
  5. Pour the cake batter into the cake tin and bake for 40 to 45 mins or till done (i.e. skewer inserted in the centre comes out clean)
  6. Let cool on a wire rack. Slice & serve topped with strawberry sauce!
For the Sauce
  1. In a vessel put in all the ingredients for the sauce & let heat a bit to thicken. Stir frequently to blend the cornflour well.
  2. Cool to room temperature & chill in the fridge. Pour over the cake to be served.
Notes
  1. I actually did not follow any measurements for the sauce but just threw in all the ings & tasted in between and adjusted the sweetness by adding some crush & water. During season, you may make fresh strawberry sauce.
  2. You can substitute strawberry flavor custard powder with vanilla flavored one as the original recipe calls for. In that case, use some basic icing over it instead of this sauce. You could also top the vanilla flavor custard pow cake with vanilla butter cream.
  3. You could also add some some other basic icing of your choice instead of the above sauce.
