A delightfully light and citrus-y Moroccan recipe to serve with sweet & sour Moroccan stew. This mint-y couscous is a perfect match with the stew. Couscous is a dish made from semolina that is cooked by steaming. Couscous is lightly seasoned and served with any stew spooned over it.

Whenever the topic of low cal & healthy eating arises, mention of salad is never far behind! To be honest, I am NOT fond of salads. For me its just something to be taken just before starting a 3-course meal! Somehow cold fruits and vegetables drizzled with some oil and vinegar never draws my attention but makes me turn away from them.
An attempt to create a quick fusion recipe was underway. Created and the attempt turned out to be successful!
On that day it was cloudy outside & showing signs of rain showers. So any plans of going out is temporarily suspended. And the hunger pangs made us crave for something new & interesting. I was a bit lazy to go for too complicated dishes & that was when I remembered this recipe I had sometime back filed away in my memory as a must-try one! With no second thoughts, this dish was created within minutes & finished off even sooner! Try it out & you will know why!

Some people you meet in the journey called ‘life’, you will take a little while to get acquainted to. And then with some its an instant connection! You go on and on chatting with this newly met friend all about your past, your dreams maybe or your opinions and anything about you find interesting. And in the end you say it was like a reunion with an old friend!
I now know that distance cannot act as barrier between friendship, nor does difference in culture or language. This reminds me of my grandmother who by conversing in Kannada and very few words of English thrown in between made good friendship with a German lady. And this lady simply adored my grandma! Essence of a good friendship leans more towards feelings, emotions and the bond we share with the other person.
I have no idea what plays a role in this ‘instant connection’ between two strangers – is it the positive vibes or similar interests or fate?? Whatever the reason, this stranger is now your new found friend, a treasure worth cherishing for ever.
The summer calls for meeting up with friends for a barbeque, having friends over for tea etc. Its the season of meeting & catching up with friends & family. Not to forget unexpected visitors during the summer holidays. All this always finds us rummaging through our recipe collection to find something quick & easy!
Having assumed that the making of the Short Crust Pastry itself would take a lot of time ( and I was not even sure if the experiment would be a success mind you) I chose a simple filling. After browsing through pages & pages of savory tarts recipe, I finally came upon this recipe – a mixture of the various recipes I came across! If the base fell apart, i could at least use the filling as a topping for toasted bread or baked bread moulds or for canapes etc..Well…you get the point..
