Besan Laddoos

 
 
Besan ke laddoos or sweet dumplings made from gram flour, ghee and sugar is one popular Indian sweet recipe made and relished in many homes during festivals, like Deepawali and Krishna Janmashtami. Laced with the flavor of cardamoms (elaichi) and some nuts mixed in, all make it a  tasty sweet dish. No wonder they are well liked by so many!
 
Serve this traditional sweet in traditional serving plates for festivals. And there is an interesting way to eat and enjoy the leftovers on other days. That is,  for a fancier version, serve them with eggless vanilla custard! Yes, chilled or even warm custard with homemade besan laddoos is a mouthwatering treat!

Life throws in many opportunities your way. Some seem promising and some not so. Some call for major turnaround and some become a part of our daily life. Some call for role reversal or role change. The new openings and chances that come your way will have many more such different shades. Opportunities need to be seized real soon! Because, once opportunities go they take a long time to come back. They need to be scrutinized from various angles. These ‘chances’ do not last forever. They come with an expiry date.
 
What will be the right key to unlock the ‘opportunity’?
 
Have a positive attitude, focus, be curious, meet more people and discuss on it, be willing to explore and take risks and in the end, take your decision and stand by it!
 
When we set out to do the best we can do, putting all our efforts, heart and mind to it, it is but inevitable that the best opportunites light up your path. Great opportunities will find us and knock on our door because we are doing what we truly believe in and what makes us happy. And then we open the door to welcome a ‘new juncture or event’ with hope and dedication at an all time high!

Mango Sheera

 

Its time again to immerse oneself into abundance of juicy velvety mangoes! I am sure many have plans to experiment with them in your cooking. Or even simply enjoy them fresh as is. After a big dose of rasayna, here it was time to move on to the next mango item on the to-do list – Mango Sheera!

Sheera is an Indian sweet dish, commonly made with semolina, sugar and water. Aromatic and exotic kesar (saffron) gives it flavor and a nice yellow gold hue. Nuts and raisins are fried in ghee and added in the end. It is also known as kesari bhath. Sometime back innovative skills became the ruling force in the kitchen and other interesting variations to sheera came into existence. Different varieties of fruits are added to give a nice twist, like chickoos, apples, bananas, mango, jackfruit or even different fruit crushes.

It`s never too late..& some Malai Kulfi

The train slowly makes its way to the station and stops. Passengers get down, some of them get on it. And in a few minutes it is all ready to make its way along the chosen route to the next destination. And there will be few passengers who try and rush in at the last minute to climb onto the train. And then some more who miss it. A brief moment of cribbing and blaming follows, frustration is vented out on all that is within reach. But eventually he will make his way to buy tickets for the next train that arrives. He may have been late for his first ride but then does get on the next one.

Life throws many opportunities at us to grab the ones that interest you and to take on the path your heart desires. Often people end up in the wrong path, doing things what others want. Halfway through the journey we realize we have taken a wrong turn. And then comes the need to make a choice – to continue ahead on the same road or take a diversion towards the right road. A need to once again bring to light our priorities and goals in life. And if they are still not clearly visible, we need to annihilate forces that block our vision in life, which is most often –  fear. Fear kept us off the right path. And when the ‘culprit’ is extinguished the right path becomes visible from a distance. Once we turn towards it, all roadblocks are wiped out!

 For it`s never too late to be what you might have been. The obstacle is only from within you, never outside.

Udipi is a small town situated just 60 kms away from Mangalore (a city is South Coastal Karnataka). Udipi is the abode of Lord Krishna. ‘Udipi cuisine’ is said to have developed and perfected in the Udipi Krishna Math (Lord Krishna Temple). Udipi was earlier known as ‘Shivabelli’ and later came to be known as ‘Shivalli’. The Brahmins of Shivalli were known for their Vrata-oriented and health centered cooking. Some traditional recipes were made from ingredients one would not dream of cooking.Chutneys, gojjus were made from even peels or seeds of various fruits and vegetables, like orange peel, cucumber seeds, peels of ridgegourd, bottlegourd and so on.
